It’s Been A While

Forgive me. It’s been almost two months since my last post and I’ve fallen a bit behind. I do have a primary full time job and this year I really do think they are trying to wear us down to the bone with upgrade after upgrade. My weekends need to get back to cooking and relaxing; maybe even a workout or two.

Super Bowl

I’m not really an avid football watcher. I only ever played it in my early twenties with a group of guys on Sunday afternoon. But once that stopped, I quickly lost interest. However I do like to watch the Super Bowl if anything just for the commercials and the snacks!

Enter Super Bowl Hot Wings.

I do enjoy a variety of flavors but lately my palate has stucks to 3 main sauces. The classic buffalo sauce, lemon pepper and a spicy thai chili sauce. I chose not to deep fry my wings but rather roast them in the oven. Whether you are a drums or flats kinda person, these 3 different sauces are sure to please everyone!

Ingredients

  • 2-3 lbs chicken wings
  • Lawry’s Lemon Pepper Seasoning
  • Frank’s Red Hot Buffalo Wing Sauce
  • Mae Ploy Sweet Chili Sauce
  • Red Chili Pepper Flakes
  • Honey
  • Sliced green onions
  • Huy Fong Foods Sriracha Hot Chili Sauce
  • 1 stick of unsalted butter
  • Olive oil
  • Salt, Pepper
  • Onion Powder
  • Garlic Powder
  • Smoked Paprika
  • Cornstarch

What To Do

  1. After removing from the packaging, rinse the chicken wings under cold water.
  2. Pat dry with paper towels and coath with olive oil, season with salt, pepper, garlic powder, onion powder, smoked paprika and a teaspoon of cornstarch. The cornstarch will help crisp them up in the oven. Place the wings uncovered in the fridge overnight. This will help dry out the skin and make a crispier wing.
  3. In a saucepan, melt one stick of unsalted butter (1/4 cup) and added 1 1/2 tablespoons of lemon pepper seasoning. I was going for the lemon pepper wet look. Or as an alternative method, melt one stick of butter, brush the wings with the butter then sprinkle with lemon pepper seasoning.
  4. In a second saucepan, add 1/2 bottle of Mae Ploy Sweet Chili Sauce, one tablespoon of honey, 1 teaspoon of sriracha sauce, and a dash of chili flakes. Be cautious with the chili flakes and sriracha, too much and it will make for a very spicy 🌶️ wing.
  5. Preheat the oven to 400°F. Line a baking tray with aluminum foil and coat with olive oil to prevent the wings from sticking.
  6. Once the oven is heated, cook the wings for 20 minutes, flip and cook for an additional 25 minutes.
  7. Place the wings in a bowl, and then coat with each sauce to your liking. Don’t forget to garnish the spicy thai wings with green onions

Dig In!

With 2-3 pounds of chicken wings, this will feed approximately 4-6 people if being served as the main dish. At a Super Bowl party, this will ensure everyone will get to sample all 3 sauces.
