Delicious Broccoli Cheddar Soup

When the cooler temperatures hit, the last thing I feel like doing is going outside. But what I do feel like doing is cooking up a hearty soup to warm me up on the inside. This was my first attempt at making a broccoli cheddar soup. Maybe it was my aversion to broccoli when I was younger that it never crossed my mind.
Thankfully as I got older, my palate matured and seeing all the Panera commercials for soup motivated me to make my own unique recipe. It’s a an easy quick recipe anyone do and will be sure to hit the spot on those cold fall days.
Ingredients
- 2 heads of broccoli
- 1 carrot
- 3 cloves of garlic minced
- 1/2 onion finely diced
- 2 cups of chicken broth
- 1/2 heavy whipping cream
- Salt and Pepper to taste
- 1/2 tablespoon of paprika
- 1 teaspoon red chili flakes (optional)
- 2 tablespoons of olive oil
- 2 tablespoons of unsalted butter
- 2 tablespoons of all purpose flower
- 1 cup of medium cheddar cheese
- 1/2 cup of white cheddar cheese
Instructions
Sauté the onions in olive oil until they are lightly golden brown add in the flour and 2 tablespoons of butter in to form the basis of our roux. And the carrots, and the garlic and sauté until fragrant usually a couple minutes, throw in the broccoli and the rest of the spices add the chicken broth and heavy whipping cream cover with a lid and simmer for about 10 minutes. Lower the heat to low add in the cheddar cheese. And enjoy!
