Supersized McRib Sandwich

The First Time

I don’t remember exactly when I had my first McRib, but I do know it was sometime in the mid 1990s. It was probably on a Saturday afternoon after working a half day at the oil change shop and I needed to satisfy this craving in the depths of my stomach.

I don’t even remember what it cost back then but I do know it hit the spot. And whenever McDonald’s has it back on the menu, I happily make my way down to the closest location, order one off the menu and messily eat it on the way home. In fact, I don’t think a McRib has ever made it half the journey to my home. But at the least the fries have!

Let’s Make One!

Since spending more time in the kitchen increasing my culinary skills, I thought to myself “What’s stopping me from making one?!” And so I did! With one caveat: Let’s Supersize it

One entire rack of ribs and 1 large hoagie roll later, I had my supersized McRib.

Ingredients

  • 1 large hoagie roll
  • 1 rack of pork ribs
  • 1 white onion
  • pickle slices
  • Your favorite BBQ sauce

For the Rub

  • 2 tablespoons of salt
  • 2 tablespoons of pepper
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 2 tablespoons of brown sugar

Instructions

Combine all the ingredients for the rub in container and shake vigorously. Remove the membrane from the back of the ribs and apply the rub generously. Some folks will use a binder like mustard or oil for the rub to stick but I opted out of doing that this time.

Wrap the rack of ribs in foil and cook in the oven low and slow at 300°F for a total of 3 1/2 hours (ovens will vary). After 3 hours remove from the oven, apply the BBQ sauce and cook for the remaining 1/2 hour. After which, cut open the foil, apply more BBQ and place under the broil for 3-5 minutes, apply more BBQ and finish off after another 3-5 minutes under the broiler to really caramelize the sauce.

Assembly

Lightly toast the hoagie, apply a layer of BBQ sauce, add the rack of rubs, apply a generous helping of onions (cut into 1/2 moons) and sliced pickles, close it up and enjoy!
